Umiya Sushi: A Las Vegas AYCE Pioneer That Keeps Rolling Strong

There’s no shortage of all-you-can-eat around town, and when it comes to sushi, Umiya Sushi stands out as one of the city’s original all-you-can-eat (AYCE) sushi restaurants. Since its opening, Umiya has cemented itself as a go-to spot for both locals and tourists craving high-quality sushi at a great value.

A Sushi Haven in the Heart of Vegas

Located across the street from the Palms Resort & Casino, Umiya is a landmark in the heart of a booming entertainment district.

Surrounded by attractions like K1 Speed indoor racing, Oodle noodle Udon restaurant, Japan mini-mart, and Mama Mia Italian restaurant, this sushi restaurant stood strong while other businesses kept changing.

I’ve been eating at Umiya Sushi since 2012, and while the restaurant has gone through many changes—especially in its staff—you can always count on one thing: the food remains exceptional. Whether you opt for their a la carte menu or dive into the AYCE experience, the variety and freshness of their dishes never disappoint.

On my latest visit, I decided to take a different approach—steering away from traditional nigiri and focusing on a more American-style sushi experience. Here’s what we ordered and why each dish stood out:

Seaweed Salad

A refreshing start to the meal, the seaweed salad at Umiya is light, flavorful, and packed with umami. The slight crunch of the seaweed, combined with a tangy sesame dressing, made it the perfect appetizer to awaken the taste buds.

Pork Belly

Sushi spots aren’t typically known for their pork belly, but Umiya’s version is a must-try. The slow-cooked, tender pork belly had a rich, melt-in-your-mouth texture with a perfectly caramelized glaze that added just the right amount of sweetness.

Spicy Edamame

A classic with a fiery kick. The spicy edamame at Umiya is coated in a bold chili sauce, making each bite a satisfying mix of heat and saltiness.

It’s the kind of snack that keeps your hands busy while you wait for the sushi rolls to arrive.

Lobster Roll

This roll is a crowd-pleaser for seafood lovers. Chunks of lobster are wrapped in rice and drizzled with a creamy sauce that enhances the natural sweetness of the lobster.

The texture is a beautiful balance of soft and crispy, thanks to a light tempura touch.

Japanese Lasagna

One of Umiya’s most indulgent dishes, the Japanese Lasagna roll, is a sushi lover’s dream. Layers of sushi rice, crab mix, and avocado are topped with a rich, baked mayo sauce. Overall, giving it a warm, cheesy texture that’s both decadent and unforgettable.

Baked Salmon Roll

Mexican Fiesta Roll

A fun fusion of flavors, the Mexican Fiesta roll brings a zesty twist to traditional sushi. Spicy tuna, jalapeño, and avocado are rolled together, then topped with spicy mayo and crunchy tempura flakes for a satisfying crunch with every bite.

Deep-Fried California Roll

Taking a classic and making it even better, the deep-fried California roll combines the familiar flavors of crab, cucumber, and avocado with a golden, crispy tempura coating.

The result? A roll that’s crunchy on the outside, creamy on the inside, and completely addicting.
