Founded in sunny San Diego back in 1979, this breakfast and brunch favorite has grown into a southwest staple, with more than 40 locations nationwide and five here in Las Vegas.

Despite the growth, it retains the warmth, personality, and freshness you’d expect from a neighborhood spot.

For someone like me — a self-proclaimed breakfast-anytime enthusiast — it’s the perfect excuse to indulge in all things eggs, coffee, and comfort.

We don’t usually feature chain restaurants in Everyday.Vegas, preferring to focus on locally owned gems. But sometimes a place earns its spot in our pages by delivering a dining experience that feels far from corporate. Broken Yolk Cafe is one of those rare finds.

My recent Sunday visit to the Summerlin location made it clear why this California-born brand has earned a loyal following without losing its soul.

Coastal Comfort with a Local Twist

Located in the space of a former IHOP, this Broken Yolk Cafe has been transformed into a bright, welcoming restaurant with plenty of natural light, a big bar, and seating for groups of all sizes.

It’s busy but not chaotic, full of laughter, the sound of clinking cutlery, and the smell of freshly brewed coffee.

Even with a packed house at noon, we were greeted right away and seated without a wait — the last open table felt like a lucky find.

Service that Sets the Tone

Our server, Savanah, was a standout from the very beginning. Friendly, efficient, and genuinely enthusiastic, she had a knack for making us feel welcome while keeping service quick and seamless.

Her recommendations came with a smile, and she was right on the money.

Our hot lattes arrived first — perfectly prepared and rich with flavor.

It might sound simple, but coffee done right sets the mood for the whole meal, and this one was spot-on.

A Fiery Favorite: El Fuego

Savanah pointed me toward the El Fuego omelette, a plate that lives up to its name.

Packed with jalapeños, Mexican chorizo, and jack cheese, it came with house-made tortillas and breakfast potatoes.

The first bite was all I needed to know I’d made the right choice.

Fresh ingredients, bold flavor, and just the right amount of heat made this dish unforgettable.

Everything tasted as if it had come straight from the farm to the kitchen that morning.

Chilaquiles Worth Bragging About

My wife went with the chicken chilaquiles, a dish I’ve tasted at countless restaurants over the years.

Broken Yolk Cafe’s version blew the rest out of the water. Perfectly crisp tortilla chips layered with tangy sauce, tender chicken, and a balanced kick of spice — these were chilaquiles done right.

If you’re a fan, you’ll have a hard time topping this plate anywhere else in the city.

One of the most impressive things about Broken Yolk Cafe is how it sidesteps the predictable feel of a large franchise.
