This past Friday, after wrapping up another week at the office, we still had a few errands to run. We had skipped lunch, the afternoon was getting away from us, and we needed the kind of good grub that can officially close out a long week. That is how we ended up walking into Chip Off the Block Deli Subs Smoke House Grill.

A Neighborhood Butcher Shop With Lunch Built In

Chip Off the Block is part of The Butcher Block, a local, family-owned butcher shop with a deli counter that turns quality meats into sandwiches, burgers, and smokehouse favorites. It is a combination that makes sense the moment you step inside. One side invites you to order lunch, while the other makes you wonder what you should bring home for the grill.

Lately, we have been focusing more on southwest Las Vegas, where new restaurants and local businesses seem to appear every time we drive through the area.

I remember when Rainbow felt like it practically ended near Windmill. Today, South Rainbow is lined with restaurants, markets, cafés and neighborhood concepts competing for the attention of hungry locals.

A Simple Space That Knows Its Purpose

One of the guys behind the counter greeted us, shared his favorite recommendations and made ordering easy. The restaurant side is clean and comfortable, but it is not trying to be a full-service dining room.

Chip Off the Block is built around good meat, straightforward service, and food that arrives ready to satisfy.

There is no complicated theme or oversized presentation. You come in hungry, order something substantial and remember where to return the next time lunch needs to deliver.

The menu bridges the butcher shop and the lunch counter with subs, hot sandwiches, burgers, smokehouse selections and rotating specials. That range makes the deli useful for different appetites. Someone can stop for a familiar burger, choose a stacked deli sandwich or lean toward smoked meat without leaving the same counter. It also gives regulars a reason to return and order something completely different from the previous visit.

Two Recommendations, Two Easy Decisions

We followed the counter recommendation almost exactly. I ordered the tri-tip sandwich with fries, while Esther chose the smash burger with sweet potato tots. Within about five minutes, both plates were on the table, and the first bites showed us why the staff was so confident.

The Tri-Tip Sandwich With Fries

The tri-tip sandwich was a celebration of beef without becoming excessive. It had enough meat to make every bite count, but it was not stacked so high that the sandwich became impossible to eat. The bread held together, and the rich, savory beef stayed at the center of the experience.

The fries kept the plate familiar and uncomplicated. Together, they created a hearty lunch that still felt balanced. Every bite delivered the flavor we hoped to find inside a butcher-shop deli.

The Smash Burger With Sweet Potato Tots

Esther’s smash burger was just as impressive. The patty had the savory flavor and crisp edges that make a smash burger so enjoyable, while the toppings supported the meat instead of hiding it.

The sweet potato tots added a lightly sweet contrast to the burger. Crispy outside and soft inside, they disappeared quickly. The burger did not rely on a tower of toppings or dramatic presentation. The meat carried the meal, exactly as it should inside a butcher-shop deli.

Butcher-Counter Quality at a Casual Price

During our visit, a sandwich or burger, a drink and a side came to around $15 per person. That is close to what many fast-food meals cost today, but this meal came from a local business built around meat quality.

You do not need to dress up, make a reservation, or turn lunch into an event. Stop in while running errands, order at the counter, and enjoy a meal that tastes far more memorable than the price suggests.

The Market Side Makes the Stop Even Better

After eating, it is worth exploring The Butcher Block side of the business. The company describes itself as a family-owned, full-service butcher shop offering beef, pork, lamb, seafood, poultry, wild game, custom cuts and sausage made on site.

The display cases are the main attraction, but the shelves also carry sauces, seasonings, chips, deli products and other cookout supplies. I even noticed a smoker for sale. I am not sure whether it was a one-time display or a regular product, but it fit a shop designed for people who genuinely enjoy cooking meat.

Readers who enjoy local specialty markets can also explore our visits to Golden Boy Market & Deli and Malincho Euro Market & Deli, two very different takes on neighborhood deli and market culture.

South Rainbow Keeps Giving Locals More Reasons to Explore

Chip Off the Block fits naturally into the growing southwest Las Vegas dining scene, where quick counter-service meals sit close to polished dinner destinations.

Nearby discoveries such as 303 In The Cut, Savoey Thai, and Dirt Dog show how much personality can be found in southwest comfort food, while Butcher & Thief takes the neighborhood’s love of beef in a more elevated direction. Chip Off the Block lands in a different lane: casual, practical, and built for people who want quality without the ceremony.

We Came In Hungry and Left Planning the Next Order

With a helpful team, quality meat, fair prices, and sandwiches that can leave you thinking about them long after lunch, Chip Off the Block gives locals exactly what a neighborhood deli should provide.

We arrived because we had skipped lunch and needed something fast. We left impressed by how much flavor can come from keeping the mission simple: serve good meat, treat people well, and give them a reason to return when they are truly hungry.

Next time, the hardest part will not be deciding whether to stop. It will be choosing between another tri-tip sandwich, one of the smokehouse options, or a fresh cut to take home for the grill.

Frequently Asked Questions

What is tri-tip?

Tri-tip is a boneless, triangular cut from the bottom sirloin. It is known for full beef flavor and can be roasted or grilled before being sliced across the grain for a more tender bite.

How should tri-tip be sliced?

Let the tri-tip rest after cooking, then slice it thinly across the grain. Cutting across the muscle fibers helps create a more tender bite and makes the roast easier to use in sandwiches.

What makes a smash burger different from a regular burger?

A smash burger starts with a ball of ground beef pressed firmly onto a hot cooking surface. The direct contact creates thin, browned edges and a flavorful crust while the patty cooks quickly.

How long does freshly sliced deli meat last in the refrigerator?

FoodSafety.gov recommends keeping opened or deli-sliced luncheon meat refrigerated at 40°F or below and using it within three to five days.

Can deli meat be frozen?

Yes. FoodSafety.gov lists one to two months as a general freezer-quality guideline for opened or deli-sliced luncheon meat stored at 0°F. Its texture and quality may decline during longer storage.
