Komex in North Las Vegas brings together two distinct culinary worlds—Korean and Mexican—into one unexpected, flavorful experience. Rooted in a history of migration and cultural exchange, this Las Vegas eatery blends traditional ingredients and techniques from both nations, creating dishes that surprise and delight with every bite.
History Repeats By Accident
South Korea and Mexico share a surprisingly rich history. During the era of Spanish rule, when Mexico was known as “New Spain,” trade and cultural exchanges between the two nations became common.
In 1905, a South Korean ship arrived in the southern peninsula of Mexico, carrying over 1,000 immigrants to the region now known as Yucatán. This connection continued to grow, and in 1962, both nations formalized their relations by opening embassies in each other’s capitals.
This history of connection and exchange finds a modern-day expression at Komex, a Korean-Mexican fusion restaurant in Las Vegas. Founded by a Korean owner whose father managed Mexican grocery stores for over 20 years, Komex was born from a personal blending of cultures.
Taking inspiration from items at his father’s grocery store and mixing them with his traditional Korean lunches from home, the owner discovered a natural and delicious fusion of flavors.
The fusion continued almost by accident. In 2008, a regular customer, curious about the meal, bought the lunch outright—a moment that marked the unofficial birth of Komex.
After gaining traction through social media and word of mouth, Komex officially opened its doors in Decatur in 2011, attracting diners eager to experience the harmonious marriage of these two unlikely culinary worlds.
Tasting Through Two Worlds
As a Mexican and Cuban, I found it easy to get to know Komex and its fusions, as many of these experiences and distinct flavors were already familiar to me. My friend and I decided to get a lot of dishes and test our palates.
The owner himself brought us chips and salsa and took our order, recommending the Fusion Torta for first-time visitors.
Any place that serves Tortas normally puts carne asada as their meat of choice. However, Komex decides to marry the Mexican telera bread with Korean bulgogi and top it with their own homemade Korean hot sauce. It also features the traditional jalapeños, onions, pico de gallo, tomatoes, lettuce, and avocado.
My friend got the Bulgogi Rice Bowl, which was something she ate very often when visiting Korea. Consisting of rice, baby greens, their signature Komex slaw, kimchi, jalapeno, and all topped with a sunny-side-up egg, it immediately took her back to when she first tried it in Korea.
Being curious, we also ordered the Bulgogi Wrap and Spam Musubi to share, which all reminded us why this unlikely pair still works so well!
The Flavor Fusion We Hoped For
Biting into each one of these dishes was such a rush of familiarity, and at the same time, the invitation of something new was waiting in the crevices of our taste buds.
To be filled with a deliciously cooked Bulgogi that made our mouths water at the touch. The Fusion Torta had the right amount of spice and the perfect amount of crunch on the bread, bringing me back to tortas that my family would make at home.
The moment we got the spam musubi and were able to dig into the sliced bulgogi wrap, we knew the special care and creativity were needed to figure out how to combine these different continental flavors together.
The sauces also capped off a wonderful topping to further complement this fusion and continue to elevate these dishes to a new level of undiscovered territory. Few places can create this sensation and familiarity that only lingers and exposes well-kept memories, but creates new ones with deliciously crafted food that only pushes its limits further to fuse one with the other.

The next time I enjoy a Mexican dish, I’ll likely be adding bulgogi on top or mixing it in. I plan to keep exploring and experimenting with new ways to fuse flavors—just as Komex has done—while uncovering why these combinations work so harmoniously.
