Our weekly tradition of hunting down new breakfast spots usually starts with a simple idea and ends with pancakes on the table.
This time, though, it started with my kids stopping mid-scroll on a social post that made a bold claim: Omelet House makes its specialty omelets with eight eggs. Yes, eight.
That single line instantly turned into a breakfast table debate.
Who orders that? Who finishes that? And more importantly, why eight? Even knowing full well that none of them would actually attempt the challenge, curiosity won.

So we piled into the car and headed to a small, easy-to-miss neighborhood spot in Summerlin.

Located at the corner of Lake Mead and Rampart, next door to Life’s a Bagel, Omelet House Summerlin is a family-owned and operated restaurant that keeps things refreshingly simple.

The restaurant is owned and operated by Iggy and Annamaria, a husband-and-wife team deeply rooted in food and hospitality.
Iggy hails from Chicago and comes from generations of cooks and chefs, bringing old-world Italian influence and Midwestern comfort to the menu.

After nearly two decades in Las Vegas, it’s clear this place reflects his passion.
Annamaria is equally hands-on, often seen working the floor while balancing life as a mom of three.
It’s not ownership from behind the scenes — it’s present, visible, and personal.
The Atmosphere: Nostalgic, Busy, and Family-Focused
We were greeted with a smile and seated right away, even though the dining room was already full.
Families filled most of the tables, kids coloring menus, parents sipping coffee — the kind of controlled chaos that somehow still feels calm.

The vibe is straightforward and nostalgic. No trendy decor, no overthinking.
Just a clear understanding of what they’re here to do: serve breakfast, make sure you leave full, and hope you come back again.
The staff leaned proudly into the restaurant’s most famous claim to fame, wearing shirts that read: “Yes, It’s 8 Eggs.” And yes, the menu confirms it — the eight-egg omelet is very real.

As predicted, none of us was brave enough to take on the eight-egg omelet.
Instead, everyone stuck with familiar favorites — which is honestly the best way to judge a breakfast spot.
