As part of our ongoing Southwest exploration, we found ourselves back at The Bend, a growing pocket of Las Vegas that seems to keep giving locals new reasons to stop, eat, sip, and stay awhile. This time, instead of dinner, drinks, or a casual evening out, we were chasing something a little more comforting: a Southern American breakfast with a scratch-made twist.
That search led us to Union Biscuit, located on the west corner of The Bend, just a couple of doors down from Butcher & Thief and Evolve Brewing Project. From the outside, it looks like another clean, modern breakfast spot in a busy new plaza. But once you walk in, you realize Union Biscuit is doing things a little differently.

A Scratch-Made Breakfast Spot With A Different Flow
Union Biscuit is a family-owned restaurant created by longtime locals who are passionate about scratch-made breakfast, fresh-baked biscuits, and Southern-inspired comfort food. Their whole idea is built around breakfast and brunch staples, creative fusions, and inventive takes on familiar classics.
The concept started as a made-from-scratch breakfast experience and has now found its brick-and-mortar home at The Bend. The restaurant is casual, bright, and easygoing, but the ordering process is not exactly the traditional sit-down breakfast setup many people might expect.

When we walked in on a Saturday morning, the place was already pretty busy. There were a few open tables, but instead of sitting down first and waiting for a server, you start at the counter. You place your order, they assign your table, and then your food is delivered once it is ready.
Personally, I am not always the biggest fan of this style, especially when I am in full weekend breakfast mode and just want to sit down, relax, and browse the menu slowly. But part of exploring local restaurants is giving new concepts a fair chance, and Union Biscuit definitely brings something fresh to the table.

Biscuits Are The Star Of The Show
The name gives it away pretty quickly. At Union Biscuit, the biscuit is not just a side item or an afterthought. It is the foundation of the whole experience.

The menu offers a pretty large variety of breakfast and brunch options, with biscuits showing up in all kinds of ways. You will find gravy, eggs, chicken, bacon, shrimp and grits, sausage, cheese, sauces, and Southern-style combinations that make it clear this place is built around big comfort, bold flavor, and freshly baked biscuit energy.

There is something fun about a restaurant that knows exactly what it wants to be. Union Biscuit is not trying to be every breakfast spot in Las Vegas. It leans into its identity, and if you are someone who loves a warm buttermilk biscuit loaded with something savory, crispy, spicy, creamy, or sweet, this menu will get your attention fast.
The Sandwich Club
Cajun Chicken Sausage, Eggs, Cheddar, Bacon, And Avocado
For my entrée, I ordered The Sandwich Club, which comes stacked with Cajun chicken sausage, two eggs, cheddar, bacon, and avocado on a buttermilk biscuit.

This is the kind of breakfast sandwich that sounds heavy on paper, but it came together really well. The biscuit gave it that buttery, soft, slightly crumbly base, while the Cajun chicken sausage added a little kick without taking over the whole sandwich.
The eggs and cheddar brought the classic breakfast feel, the bacon added salt and crunch, and the avocado gave it that creamy balance that made each bite feel a little more complete. It was filling, flavorful, and definitely not your average grab-and-go breakfast sandwich.
Nashville Fried Chicken
Hot Chicken, Cole Slaw, Pimento Cheese, And House Pickles
Esther ordered the Nashville Fried Chicken, and this one felt like the kind of dish that belongs right at the center of Union Biscuit’s personality.

The sandwich comes with Nashville-style hot chicken, cole slaw, pimento cheese, and house-made pickles, all served on a buttermilk biscuit. It brings together heat, crunch, creaminess, tang, and that Southern comfort feeling in one messy, satisfying bite.
The hot chicken had flavor without being only about spice. The slaw helped cool things down, the pimento cheese added richness, and the pickles brought that sharp little pop that a fried chicken sandwich needs. Put all of that inside a biscuit, and you get something that feels fun, casual, and very Union Biscuit.
Honey Iced Coffee
House-Made Cream And A Sweet Start To Brunch
To start, I ordered the Honey Iced Coffee, which comes with their house-made cream. It was a nice way to begin the meal, especially on a warm Vegas morning when hot coffee does not always sound like the move.

The honey gave it a smooth sweetness without making it taste too artificial or overpowering. The house-made cream added richness, making it feel more like a treat than a basic iced coffee. It matched the brunch vibe perfectly and paired nicely with the heavier biscuit sandwiches.
Breakfast Beignets
Fried Batter, Powdered Sugar, Lemon Cream Cheese Icing, And Caramel
For dessert, because breakfast dessert is absolutely a real thing, we ordered the Breakfast Beignets.

These came as fluffy fried batter covered with powdered sugar, served with lemon cream cheese icing and caramel sauce on the side. They were sweet, soft, and fun to share after a savory breakfast.
The lemon cream cheese icing was the standout for me because it gave the beignets a bright, slightly tangy balance. The caramel sauce added that deeper sweetness, but the lemon kept things from feeling too heavy. It was a nice ending to the meal and a good reminder that Union Biscuit is not afraid to have a little fun with breakfast.
The Vibe Inside Union Biscuit
The overall vibe at Union Biscuit was super chill. Even though the restaurant was busy, it did not feel chaotic. The owners were present and working at the counter, chatting with customers as the line moved, and that always adds something special to a local spot.
There is something nice about seeing the people behind the business right there in the middle of the action. It gives the restaurant a more personal feeling, especially in an area like The Bend, where so many new concepts are popping up and trying to find their place in the local dining scene.

The seating is mostly designed for smaller groups, with many tables set up for two to four people, some booth seating, and a few options that can work for up to six. If you are planning a big family breakfast with a larger group, I might lean toward a more traditional breakfast spot with bigger table setups and full-service seating.
Union Biscuit also offers outdoor seating, which is always nice to have, though in the middle of a Las Vegas summer, that really depends on how much you enjoy testing your relationship with the heat.

A Fresh Breakfast Option At The Bend
What Union Biscuit does well is create a breakfast experience that feels familiar and different at the same time. You know the flavors: biscuits, eggs, chicken, bacon, gravy, coffee, and something sweet at the end. But the way they build the menu, organize the flow, and focus everything around scratch-made biscuits makes the experience feel unique.
It may not be the perfect setup for everyone, especially if you prefer a classic full-service breakfast where you sit first and order later. But the food was great, the energy was welcoming, and the concept felt fresh for the Southwest side of Las Vegas.
