If you’ve ever had a paleta on a hot Vegas afternoon, you know how satisfying one can be when the temperature climbs. If you haven’t, The Paleta Bar is an easy place to start.

Located inside Shanghai Plaza on Spring Mountain Road in Las Vegas Chinatown, The Paleta Bar specializes in colorful Mexican-style ice pops that can be customized with dips, toppings, fruit and other extras.

The concept is built around making the dessert your own, whether you prefer something fruity and refreshing or creamy, chocolate-covered and loaded with toppings.

What Is a Paleta?

A paleta is the Spanish term commonly used for an ice pop, but Mexican paletas go well beyond the basic freezer-pop experience. They can be fruit-forward or creamy, with flavors and combinations that range from simple to indulgent.

If you want to explore even more of the city’s Mexican dessert scene, Michoacana Mía also serves paletas, ice cream and Mexican antojitos in Spring Valley.

Think mango paired with chamoy and chile or a creamy paleta covered in chocolate. The combinations can be sweet, tart, spicy or rich depending on what you choose.

From the moment we stepped inside The Paleta Bar, the colorful display and customization options made choosing just one combination surprisingly difficult.

The Paleta Bar says its paletas are handmade daily, and the selection includes a variety of flavors and styles. During our visit, options included strawberry, mango, coconut, avocado, coffee and mazapán.

How to Customize a Paleta

Part of the fun here is building a paleta around exactly what you’re craving.

Step 1: Choose Your Paleta

Start by selecting your paleta. During our visit, the display included fruity options such as mango and strawberry, along with creamier choices like coconut, coffee, and avocado.

If coffee-flavored sweets are more your style, you can also explore the local coffee scene at Vesta Coffee Roasters.

Step 2: Pick Your Toppings

Next come the toppings. The selection during our visit ranged from colorful sprinkles and cereal pieces to nuts, cookie crumbs, and richer dessert toppings.

You can keep things simple or add enough texture to turn the paleta into a full dessert creation.

Step 3: Add a Dip

A chocolate coating adds another layer of flavor and texture. During our visit, we paired chocolate options with toppings for a crisp shell around the frozen paleta, while chamoy and chile offered a completely different sweet-and-spicy direction.

Step 4: Add Fruit

Fresh fruit can take the combination in a lighter direction. Depending on what’s available, additions may include strawberries, bananas, pineapple, and other fruit.

Once everything is assembled, you have a dessert as simple or as elaborate as you want.

What We Tried at The Paleta Bar

We went in ready to experiment and started with the Mango Chamoy Paleta. The combination of mango, chile-lime seasoning, and chamoy brought sweet, tangy, and spicy flavors together in every bite.

We also ordered the Dubai Chocolate Strawberry Cup, a rich strawberry-and-chocolate dessert that gave us something completely different from the frozen paletas.

Another standout was the Mazapán Paleta, dipped in chocolate and topped with nuts. The creamy, nutty combination makes it a particularly fun choice for anyone who already enjoys traditional Mexican peanut candy.

More Than Paletas

Paletas may be the centerpiece, but they aren’t the only reason to visit.

Fruit cups give you another way to combine fresh fruit with chile, lime, chamoy, and other toppings. It’s an especially refreshing option when you’re exploring Chinatown on a hot afternoon.

If you’re in the mood to keep exploring desserts afterward, Burgundy Bakery & Cafe offers a completely different selection of sweets and pastries elsewhere in the valley.

The Paleta Bar also serves aguas frescas, with flavors changing depending on what’s available.

During our visit, the drink selection included familiar Mexican-inspired flavors alongside fruit-based choices. They pair easily with either a paleta or fruit cup.

A Fun Stop for Families

The Paleta Bar works especially well for families because everyone can customize their own dessert. Kids can choose a paleta, dip, toppings, and extras, while parents can explore everything from fruit-forward combinations to classic Mexican-inspired flavors.

The process itself is part of the experience, and ordering several different combinations makes it easy for a group to compare flavors.

The location also makes The Paleta Bar an easy dessert stop before or after exploring the restaurants around Shanghai Plaza. For a nearby meal, O.Onigiri inside Shanghai Plaza serves Okinawan-inspired rice bowls and onigiri, while Mama Chai’s is another Chinatown option for drinks and creative sweets.

Pro Tip: Go with friends or family and order different combinations so everyone can try something different.

The Paleta Bar brings traditional Mexican-inspired frozen treats together with a modern build-your-own format. Between the paletas, fruit, toppings, aguas frescas, and other sweets, there are plenty of ways to create something different each time you visit.
