Last Friday evening, we returned to one of our favorite Las Vegas steakhouses — Echo & Rig in Tivoli Village.

Though none of us were particularly craving steak, the restaurant has a way of turning any visit into an exceptional dining experience.

Over the years, Echo & Rig has become one of those reliable local favorites that never disappoints — a perfect mix of high-end quality and genuine comfort.

The restaurant was bustling when we arrived, but thanks to our reservation, we were quickly greeted and seated.

It’s an unexpected, distinctive feature that sets the tone for what makes Echo & Rig so special in Summerlin.

The philosophy behind Echo & Rig

According to their website, Echo & Rig was built on a simple philosophy: great food starts with great sourcing.

They work closely with ranchers and farms like Cape Grim in Tasmania and Creekstone Farms in Kansas to ensure every cut represents the best of the best — the top 2.5% of USDA-graded beef.

The name itself reflects balance and craft — “Echo,” symbolizing presence and story, and “Rig,” representing strength and utility. Together, it captures what the restaurant delivers so effortlessly: food with depth, meaning, and intention.

As you climb the staircase to the second floor, where the main dining area is located, you’re instantly drawn in by the sound of conversation, laughter, and the rhythmic clinking of cutlery.

The restaurant offers a balcony with a view of Tivoli Village, a beautiful option for al fresco dining, though this time we opted for indoor seating — some members of our party weren’t quite ready for the chill of a November evening.

Atmosphere & Service

The staff at Echo & Rig is consistently attentive, fast, and friendly. It’s a place where you’re treated like a regular, even on your first visit — no pretension, just genuine hospitality.

Around the table, we all agreed that it perfectly fits the description of a “high-end steakhouse with reasonable prices.” Every dish feels luxurious, but the experience remains warm and approachable.

From the moment our drinks arrived, we knew we were in for a great evening.

We ordered a mix of wine, margaritas, and vodka cocktails, all of which were beautifully crafted and served promptly.

The evening flowed naturally — easy conversation, good company, and food that made everyone smile.

Starters & Sides

The house bread came out warm, quickly followed by an impressive lineup of appetizers that could easily stand alone as a full meal:

  • Sweet Fire Cauliflower
  • Brussels Sprout Leaves with pistachio and lemon
  • Pork Belly Burnt Ends
  • Portobello Fries with herb aioli
  • Roasted Garlic Mashed Potatoes with white cheddar

Each appetizer brought a distinct flavor and texture to the table — from spicy and smoky to buttery and crisp. It’s the kind of menu where you can’t go wrong, no matter what you pick.

Main Courses

By the time our entrees arrived, most of us were already full — but when the food looks this good, you make room. We shared bites across the table, comparing notes and favorites. Our selections included:

  • Ribeye – Creekstone All Natural
  • Branzino Ala Plancha – Wild, crispy skin, with upland cress and olive oil dipping sauce
  • Caesar Salad – Romaine hearts, Reggiano parmesan, herbed croutons, and classic Caesar dressing

The highlights

The ribeye was beautifully marbled and cooked to perfection — juicy, flavorful, and rich.

The branzino stood out for its crisp skin and delicate balance, paired simply with olive oil and greens.

Even the Caesar salad felt like an elevated classic, with house-made dressing that brought everything together.

Ending on a Sweet Note

We couldn’t leave without dessert, and our choice — the Hot Coffee Cake — was the perfect finale.

Moist, aromatic, and served warm, it hit that ideal balance of indulgence without being overly sweet. Paired with a round of fresh coffee, it wrapped up the night perfectly.

An Experience Worth Repeating

Echo & Rig continues to raise the bar for Las Vegas dining. Every visit feels refined yet relaxed, and each dish showcases the kind of craftsmanship that makes this place a true local gem.

Whether you’re going for a romantic dinner, a family gathering, or a business lunch, this restaurant fits the bill every time.

After dinner, we took a walk through Tivoli Village — passing Milkcow Creamery, Leone Café, and our favorite Mexican restaurant, El Dorado Cantina, while a large group of people was dancing outside La Casa,

You can feel a new energy in Tivoli lately, with more local events, galleries, and restaurants coming to life. It’s a reminder that this part of Summerlin continues to evolve — and Echo & Rig remains at the heart of it all.
