As winter finally kicked in and the desert nights turned crisp, we found ourselves craving the kind of food that doesn’t just fill you up, but actually warms you from the inside out.
For us, that often means Indian food — slow-simmered sauces, layers of spice, and the kind of aromas you can smell before you even open the restaurant door.
That’s how we ended up at Mint Indian Bistro, a local favorite with three locations across the valley, known for its bold flavors, creative twists, and welcoming dining rooms where comfort food and Indian hospitality meet.
For this visit, we stopped at the S. Durango location inside the Durango Rochelle Center — tucked behind one of our favorite Mexican spots, Milpa, and right across the street from Shawarma Vegas.
It’s one of those places where you can find several great local bites side by side, and Mint fits right in.
This wasn’t a fancy night out or a big celebration. It was exactly what Everyday.Vegas is all about: finding the kind of neighborhood spot you can count on when you just want a good meal, good company, and a place that feels like it’s happy you walked in.
A neighborhood favorite with a bigger story
Mint Indian Bistro began with a simple idea: bring authentic Indian flavors to Las Vegas and pair them with a full dining experience.
Husband-and-wife team Kris and Bindi Parikh started their journey in the kitchen, playing with family recipes, testing spice blends, and finding ways to honor tradition while still making room for creative touches.

That approach shows up in the details. The menu leans on well-sourced spices and fresh ingredients, with many of those spices imported directly from India.
At the same time, there’s a real effort to keep things approachable, whether you’re a long-time lover of Indian food or just now learning the difference between tikka masala and korma.
With three locations spread across the valley, Mint has become a familiar name to Vegas locals.
It’s one of those spots you hear recommended again and again — the place people send their friends when someone says, “I’m craving Indian. Where should I go?”
Inferno wall, buffet line, and a warm welcome
Walk into Mint and the first thing that will probably catch your eye is the Inferno Wall of Flame — a collection of photos featuring brave guests who took on the “Inferno” spice level from the menu.

Next to the wall, during the day, you’ll often see the buffet setup: warmers lined with curries, rice, and rotating specials that tempt you into trying “just one more spoonful.”

On this visit, we skipped the buffet and went straight for the dinner menu. The plan was simple: start with something crispy, move into our favorite curries, and let the rest of the evening take care of itself.

Next came the vegetable samosas, described on the menu as “a fried pastry shaped like a mighty mountain rising up in the Himalayas,” and honestly, that’s not far off.
Each one arrives hot and golden, with a crisp exterior that gives way to a soft, comforting filling of mildly spiced potatoes and peas.

The seasoning is balanced — enough warmth from the spices to be interesting, but not so much heat that it overwhelms.
Dip them in the chutneys, and they become the kind of appetizer you almost regret sharing. If you love comfort food, this is one of those dishes that feels like a hug in pastry form.
Mains that really deliver: malai kofta & chicken tikka masala

For the main course, we went straight for favorites. I ordered malai kofta, a dish I come back to again and again.
At Mint, it’s made with a medley of mixed vegetables shaped into dumplings, then simmered in a creamy sauce built on cashew, onion, herbs, and gentle spices.

The kofta themselves are soft and rich without being heavy, and the sauce is the kind you want to savor slowly with naan or a spoonful of steamed basmati rice.
Each bite is layered: a hint of sweetness from the cashews, the savoriness of the onions, and just enough spice to keep it interesting.
It’s luxurious, but not overdone — the kind of dish that turns a cold night into something cozy and memorable.
Chicken tikka masala
Across the table, my wife went with one of the most beloved Indian dishes in America: chicken tikka masala.
Mint’s version leans into the classic approach: tender breast meat, marinated and cooked before being added to a creamy, buttery tomato sauce that’s blended with house spices until it’s silky and deeply flavorful.

The sauce is the star here — smooth, tangy, and just rich enough that you’ll be chasing every last drop with naan.
The chicken stays juicy and absorbs the flavors of the sauce without losing its texture. If you’re new to Indian food, this is a perfect entry point.
If you’re already a fan, this is one of those versions that reminds you why the dish became so famous in the first place.

Either way, the key here is balance. The heat doesn’t replace flavor; it supports it. The staff is also very good at guiding you: tell them honestly how much spice you can handle, and they’ll steer you in the right direction.

One of the perks of dining at Mint is how inclusive the menu feels. Vegetarians will find more than just one or two token options — there’s a full spread of vegetable-based dishes, paneer specialties, and lentil curries that feel every bit as satisfying as the meat dishes.
Families fit right in, too. Portions are ideal for sharing, and the variety makes it easy to build a table full of favorites: a mild curry for the kids, something richer and spicier for the grown-ups, plus rice, naan, and appetizers everyone can agree on.

Mint Indian Bistro is exactly the kind of place that inspired the Everyday.Vegas idea in the first place.
