For our appetizer, we tried the Artichoke and Jalapeños con Queso. Served bubbling hot in a ceramic skillet, this unique take on queso fundido features a special blend of cheeses, cream cheese, tender artichoke hearts, and jalapeño slices.

The result is creamy, rich, and slightly spicy, with a subtle depth from the artichokes that sets it apart from traditional queso. Designed to serve two or more, it’s perfect for sharing — though you may find yourself going back for scoop after scoop. Paired with warm tortillas or chips, it’s a comforting and flavorful way to begin your meal.

Traditional Flavors Done Right

For our entrée, the Birria Chef Ramón was a true highlight. This centuries-old Mexican dish is famous throughout Mexico, and Pancho’s honors its tradition beautifully. Chunks of beef are marinated in a blend of herbs and guajillo chiles, then oven-roasted until tender and served in their own savory juices.

The meat is incredibly flavorful and falls apart with each bite. Served alongside fresh onions, cilantro, orange wedges, and a traditional sauce, the dish allows you to customize the flavors to your liking. Each squeeze of orange enhances the beef’s richness, while the herbs and chiles add depth and warmth.

Complemented with Mexican-style rice and frijoles de la olla, and served with your choice of hot tortillas, this dish is hearty, authentic, and deeply satisfying. It’s the kind of meal that reflects generations of culinary tradition and careful preparation.

We also enjoyed the Beer Battered Fish Tacos, which offered a lighter yet equally delicious option. Two warm corn tortillas are filled with crispy beer-battered Mahi-Mahi, shredded cabbage, pico de gallo, and chipotle sour cream.

The fish was perfectly golden and crunchy on the outside while remaining tender and flaky inside. The shredded cabbage added freshness and crunch, the pico de gallo brought brightness, and the chipotle sour cream delivered a smoky, creamy finish that tied everything together. Served with rice and beans, it’s a well-balanced and satisfying dish that seafood lovers will appreciate.

Everything we tried was delicious — thoughtfully prepared, beautifully presented, and full of bold, authentic flavor.
