Located in Downtown Summerlin, Pancho’s Mexican Restaurant offers a vibrant dining experience that combines authentic flavors with stunning hacienda-style décor.
From the moment you step inside, you’re welcomed into a warm, elegant space filled with rich colors, handcrafted details, and a festive atmosphere that feels both upscale and inviting. It’s the kind of place that immediately feels special — perfect for a casual lunch, date night, or celebratory dinner.
Pancho’s isn’t just about serving great food — it’s about creating an experience rooted in tradition, hospitality, and quality.
A Delicious Start
Every meal at Pancho’s begins the right way — with fresh tortilla chips and salsa brought straight to your table.
The chips are warm and lightly salted, and the salsa offers a balanced blend of tomato, spice, and freshness. It’s a simple touch, but it sets the tone for the flavorful experience ahead.

For our appetizer, we tried the Artichoke and Jalapeños con Queso. Served bubbling hot in a ceramic skillet, this unique take on queso fundido features a special blend of cheeses, cream cheese, tender artichoke hearts, and jalapeño slices.

The result is creamy, rich, and slightly spicy, with a subtle depth from the artichokes that sets it apart from traditional queso. Designed to serve two or more, it’s perfect for sharing — though you may find yourself going back for scoop after scoop. Paired with warm tortillas or chips, it’s a comforting and flavorful way to begin your meal.
Traditional Flavors Done Right
For our entrée, the Birria Chef Ramón was a true highlight. This centuries-old Mexican dish is famous throughout Mexico, and Pancho’s honors its tradition beautifully. Chunks of beef are marinated in a blend of herbs and guajillo chiles, then oven-roasted until tender and served in their own savory juices.
The meat is incredibly flavorful and falls apart with each bite. Served alongside fresh onions, cilantro, orange wedges, and a traditional sauce, the dish allows you to customize the flavors to your liking. Each squeeze of orange enhances the beef’s richness, while the herbs and chiles add depth and warmth.
Complemented with Mexican-style rice and frijoles de la olla, and served with your choice of hot tortillas, this dish is hearty, authentic, and deeply satisfying. It’s the kind of meal that reflects generations of culinary tradition and careful preparation.
We also enjoyed the Beer Battered Fish Tacos, which offered a lighter yet equally delicious option. Two warm corn tortillas are filled with crispy beer-battered Mahi-Mahi, shredded cabbage, pico de gallo, and chipotle sour cream.

The fish was perfectly golden and crunchy on the outside while remaining tender and flaky inside. The shredded cabbage added freshness and crunch, the pico de gallo brought brightness, and the chipotle sour cream delivered a smoky, creamy finish that tied everything together. Served with rice and beans, it’s a well-balanced and satisfying dish that seafood lovers will appreciate.
Everything we tried was delicious — thoughtfully prepared, beautifully presented, and full of bold, authentic flavor.
Hacienda Beauty & Elevated Atmosphere
One of the most impressive aspects of Pancho’s is the décor. The restaurant embraces a beautiful hacienda style, creating an atmosphere that feels both traditional and refined. Warm lighting, rich wood accents, colorful tile work, and elegant decorative elements surround you, making the space feel inviting and festive.

The attention to detail is noticeable everywhere. From the carefully arranged dining areas to the elegant traditional attire worn by the hostesses, every element contributes to a polished and immersive experience. It feels elevated without being intimidating — a balance that makes guests feel comfortable while still enjoying something special.
A Separate Bar Area & Happy Hour Specials
Pancho’s also features a separate bar area, offering a slightly more relaxed setting for drinks and small plates. It’s the perfect spot to gather during happy hour, enjoy great specials, or simply unwind after a long day.

The bar maintains the same high standard of service and style as the main dining room, creating a cohesive yet versatile experience. Whether you’re stopping in for margaritas, cocktails, or appetizers, it’s a lively and welcoming space.
