It was a warm, golden late morning in Summerlin—one of those days when the sun hits just right, and your appetite seems to wake up before you do.

I found myself pulling into the familiar parking lot of Snooze, an A.M. Eatery, a spot I’d visited a handful of times before.

But this wasn’t just another breakfast run—it felt like a moment worth savoring.
And truth be told, when a place delivers again and again, it’s time to put it in the spotlight.

From the moment you approach Snooze, there’s an energy that sets it apart.

The signature orange umbrellas outside, the bean bag toss area buzzing with kids and coffee-toting parents, and the hum of conversation spilling out onto the patio—this place doesn’t just serve breakfast, it lives it. It invites you to slow down, sit back, and start your day right.

Step inside, and you’re greeted with a vibrant and modern space that somehow still feels cozy.

The interiors blend retro diner charm with contemporary café cool—wood accents, industrial lighting, pops of color, and a long bar lined with guests sipping espresso martinis and Bloody Marys.

The “Winner Dish” Gamble

I’ve always prided myself on being what I like to call a “Unique Eater.” I don’t just scan menus—I like to challenge them.

When I find myself in a place that’s known for culinary creativity, I skip the familiar and ask for something that represents the chef’s confidence.

My standard request? “Bring me a winner dish. I don’t care what’s in it, as long as you can stand behind it.”

It’s a culinary gamble. Sometimes you hit, sometimes you miss—but when it pays off, it’s magic. And here in Vegas, chasing jackpots isn’t just a pastime—it’s a way of life. So, I decided to take a gamble and see how the adds played against me.

The Jackpot: Crab & Asparagus Omelet

What arrived was not what I expected—but absolutely what I needed.

The Crab & Asparagus Omelet isn’t your average breakfast fare, and I’ll admit, I probably wouldn’t have ordered it on my own.

But that’s the beauty of letting go and trusting the process.

The omelet was a work of art—golden and fluffy, bursting at the seams with sweet, delicate crab meat, sautéed asparagus, red onions, and earthy mushrooms.

The Gruyère cheese inside added a rich, nutty depth without overpowering the crab.

On top, a generous drizzle of Snooze’s house-made cream cheese hollandaise added a luxurious, velvety texture, while roasted cherry tomatoes and scallions brought brightness and balance.

The greens on the side—tossed with a Dijon vinaigrette, sprinkled with Parmesan, and topped with spiced pepitas—were so good they could’ve been a meal of their own.

This was brunch elevated—and it made me a believer.

Pancake Magic for the Mini Foodie

My son, a no-nonsense eater with a soft spot for simplicity, ordered the classic plain pancake.

No fancy add-ins, no drizzle of anything artisanal—just a pancake, hash browns, fruit, and syrup. But this is Snooze, where even the basics are treated like royalty.

The pancake was fluffy and slightly crisp around the edges, with just the right amount of sweetness to make syrup optional.

The fruit was fresh, not the garnish-afterthought kind. And the hash browns—crispy, golden, and comforting—were gobbled up faster than I could get a fork in.

I tried a bite myself (for research, of course), and yes, it was one of the best pancakes I’ve tasted in Vegas.

He finished everything on his plate, then stole a bite of mine. That, my friends, is a five-star review from a six-year-old.

Our drinks were just as delightful. I paired my omelet with a smooth Vanilla Latte—subtly sweet, fragrant, and made with perfectly steamed milk.

My son had a chilled house-made lemonade that he called “sweet and awesome”—and coming from a kid who usually goes for apple juice, that’s high praise.

One of Snooze’s many charms is its bar program. While we stuck to coffee and lemonade, the brunch cocktail menu is something to behold.

They offer everything from build-your-own mimosas to a Morning Margarita that adds a citrusy punch to your morning.

There’s even a Boozy Coffee Flight for the adventurous and creative mocktails for those who want the fun without the buzz.

  • Flight of Pancakes: Can’t decide? Try three minis of your choice. There’s a pancake for every mood.
  • Spicy Bloody Mary: House mix, house-infused vodka, and a garnish that doubles as a snack. They don’t hold back on the heat, which I appreciate.
