Briggs Oyster Co.: A Seafood Extravaganza

As part of the large renovation happening at Suncoast, we’ve been making it a point to explore more of the dining options inside the property—trying places we’ve walked past before, and hopefully finding our next hidden gem. That’s exactly how we ended up at Briggs Oyster Co.

To be fully transparent, we weren’t even supposed to be there. We were heading to 90 NINETY Bar at Suncoast, assuming they’d be open like most spots are during the week. Spoiler alert: they’re closed on Wednesdays. But lucky for us, right next door was Briggs—so we took it as a sign and made the pivot.

And if you know me, you already know the rest. I’m a seafood-first kind of person—most of the time I’ll choose fish over meat without thinking twice.

Living in the desert makes “fresh seafood” feel like a challenge, but Vegas has a handful of places that take the extra mile to make it happen… and Briggs definitely belongs in that conversation.

Briggs Oyster Co. at Suncoast Casino & Hotel

Briggs Oyster Co. was established in 2015 and sits right by the east entrance of Suncoast Casino & Hotel—which makes it an easy “walk-in” decision whether you’re already on property or just looking for a solid dinner without crossing town.

We grabbed seats at the bar, caught a glimpse of a few dishes flying out of the kitchen, and immediately felt like we made the right call.

We originally planned a simple night—beer and tacos, maybe fish and chips at the other bar—but once we saw what was happening around us, we leaned into it.

First impression: fast service and a great start

The staff jumped in right away and made everything feel easy. We started with a couple of Modelos, and they landed with a side of house bread (buns) that were honestly way better than “free bread” usually has any right to be.

What we ordered

Fish tacos appetizer

Lightly breaded cod, corn tortillas, pico de gallo, and shredded cabbage.

If you like fish tacos, I’m telling you—try these. The cod was crisp without being heavy, the toppings were fresh, and it just hit that perfect balance of flavor and texture. Superb.

Fish and chips

Tempura-battered fresh cod, seasoned fries, and Briggs’ signature slaw.

This is the kind of fish and chips you order when you want comfort food, but still want it done right. The tempura batter was light, the fish stayed tender, and the slaw added that needed contrast. No regrets.

Caesar salad with chicken

Crisp romaine, parmesan, croutons, creamy Caesar dressing.

Sometimes you need something green on the table to balance the crispy stuff—this one did the job. Simple, classic, and a good supporting player next to the fried favorites.

Crackling lobster bites

We thought we were done… and then I saw the special side menu.

There are moments where skipping the “specials” feels like the responsible move—and then there are moments where skipping them feels like a mistake you’ll think about later. The Crackling Lobster Bites were that second kind of moment. So yes, we ordered them… and yes, they were amazing.

When a closed door leads to the right table

And you’re right—we were sitting in an oyster bar… and we didn’t order oysters.

But honestly, that’s how you know you’re in a good dining spot. We didn’t walk in with a plan to do a full oyster moment. We stumbled into Briggs because another place was closed, and still walked out feeling like we found a destination worth returning to.

The prices were more than fair for seafood, everything we tasted was genuinely delicious, and it’s not far from home. That’s a win in Vegas.

We’ve covered a few Suncoast spots recently—like Du-Par’s—and you can see the property investing in its future. One restaurant at a time, they’re building something stronger.

Good people. Good food. Good prices. Three simple ingredients that turn a random Wednesday into a place you’ll come back to on purpose next time.
